WEST FARGO, N.D. — Take one step inside Freddy's Lefse, and the arome of fresh-made lefse is enough to remind many to remember their grandma's kitchen at Christmas.

On Tuesday, July 28, in West Fargo, the crew at Freddy's was busy filling orders, just like they do every day in the middle of a hot July. The number of orders the company makes varies from 200 to 700 packages of lefse each day.

The owner of Freddy's Lefse, Terry Cox, has been rolling out lefse at the family business for more than 40 years. It was his parents, Fred and Lorraine Cox, who started the company in 1946. Terry, his wife Michele, and Terry's brother have all spent their lives here, and they have come to the conclusion that its time to retire and sell the business.

"(It's) kind of a mix," Michele said. "We were apprehensive at first, but after you have been doing it this long, my husband is tired from rolling, it is a lot of rolling. He has been doing it 45-years."

While Lefse is made and shipped year round and sold in stores everywhere, the holidays are when orders skyrocket.

"Once in a while we will take a week off in January, otherwise we are here all the time," Michele said.

While they are still operating, even Freddy's took a hit from the coronavirus pandemic.

"Usually we sell to church bazaars and dinners, but that will be different this year too," Michele explained.

The age old question of what tastes best on top of this Scandinavian sweetness. Plain, sugar, cinnamon-sugar? After nearly 75 years of experimenting, whatever a person's favorite topping is, Freddy's seems to have gotten it right.
