April is National Soy Foods Month, and we're marking it with a couple of soy recipes and some great ideas for adding soy to your diet. Polly Ulrich is a volunteer with Common Ground North Dakota, which works with the North Dakota Soybean Council. She shares some beautiful, colorful soy dishes to share with us today.
Edamame Hummus
1 ½ cup frozen shelled edamame
¼ cup tahini
¼ cup water

½ teaspoon grated lemon zest
3 tablespoons lemon juice
1 clove garlic
¾ teaspoons salt
½ teaspoon cumin
¼ teaspoon coriander
3 tablespoons olive oil
1 tablespoon parsley

Serve with pita chips, corn chips, salsa or veggies
Edamame Hummus with Avocado
1 ½ cup shelled edamame
1 medium avocado
2 cloves (or minced) garlic
3 tablespoons lemon juice plus zest
1 teaspoon salt
½ teaspoon black pepper

3 tablespoons cilantro
3 tablespoons olive oil
