A cold soup on a hot summer day can really hit the spot.
2 large ripe mangos, peeled and roughly chopped
½ teaspoon fresh ginger, grated
½ tablespoon fresh lemon grass, choppedh
½ cup chicken stock or broth
½ cup plain yogurt
6 large cooked shrimp
2 tablespoons cilantro, chopped
Place mango ginger, lemongrass and chicken stock in blender or food processor fitted with metal blade and puree until smooth. Place in large bowl. Add yogurt. Stir to combine. Chill.
To serve, ladle soup into bowls. Place one shrimp in each bowl and garnish with cilantro.
Yield: Serves 6.
