CHEF JEFF — ONE BYTE AT A TIME: Herbed-Baked Eggs

Eggs can be part of a heart-healthy diet. This recipe, from Ina Garten (the Barefoot Contessa) is a favorite of some of her food groupies.

Herbed-Baked Eggs

¼ teaspoon minced garlic

¼ teaspoon minced fresh thyme leaves

¼ teaspoon minced fresh rosemary leaves

1 tablespoon minced parsley

1 tablespoon freshly grated Parmesan

6 extra-large eggs

2 tablespoons heavy cream

1 tablespoon unsalted butter

Kosher salt and freshly ground black pepper

Toasted French bread

Preheat broiler for 5 minutes and place rack 6 inches below heat. Combine garlic, rosemary, thyme, parsley and Parmesan. Set aside. Crack 3 eggs into each of 2 small bowls. Place 2 individual gratin dishes on baking sheet. Place 1 tablespoon of cream and ½ tablespoon of butter in each dish and place under broiler until hot and bubbly. Carefully pour 3 eggs into each gratin dish and sprinkle with herb mixture, then sprinkle with salt and pepper. Place back under broiler until whites of eggs are almost cooked. (Rotate baking sheet once if necessary.) They will continue to cook after you take them out of oven. Allow to set for 60 seconds and serve hot with toasted bread before serving.

Yield: Serves 2.
