AgweekTV: Learn how to make an Asian noodle salad for Soy Foods Month

Did you that April is national Soy Foods Month? Polly Ulrich, a volunteer with Common Ground North Dakota, which works with the North Dakota Soybean Council, is going to be making an Asian noodle salad, with several components of soy in it, for us on AgweekTV.

Here's the recipe for this colorful, nutritious, high protein dish:

Asian Noodle Salad

1 lb. linguine pasta, cooked al dente

1 lb. coleslaw or broccoli slaw (Napa cabbage, kale, spinach, carrot, radish)

1 cup shelled edamame

1 cup soy nuts

Dressing:

½ cup sugar or ¾ to 1 cup honey

¾ cup soy sauce

¼ teaspoon allspice

2 tablespoons sesame seeds

¼ cup rice wine vinegar

½ cup vegetable oil

3 tablespoons sesame oil

Can add chicken, steak or shrimp.
